Taste of Tuesday

Hey hey happy Tuesday. It's my Monday. Womp womp. I had a nice little three and a half day weekend and now I have to go back to reality. Weird.

I love to cook. I don't do it very often but I really do enjoy it. My favorite things are simple and easy. Of course. If something is too complicated than I just really don't want to have anything to do with it. Occassionally I'll try but most of the time I'll pray somebody else makes it for me or I find an easier way. All about simplicity. And what takes the least amount of dishes possible. This also means that my repertoire of recipes is really small. Sad face.

Well, Saturday I decided that I wanted to make dinner. But I didn't wanna make the same old things I always make. So I'm going through Pinterest (where else would I look?) looking for ideas when I think "Self, you've always wanted to try the chicken parm at work. Why don't you make your own??" And it sounded like a good idea. I went a little off of a recipe I found but just for the directions on what method to cook it and for how long.

I thought I'd share with you today =) I don't really measure when I cook so just use what you think is right.


You'll need 
- Boneless chicken breasts (I used 4)
- 2 eggs 
- Bread crumbs, any style/flavor you want. (I used italian style)
- Marinara sauce. (I wasn't feeling good so I just grabbed a jar. Do me a favor and share your favorite homemade recipe. No chunks please!)
- Mozzarella cheese (I bought fresh, but whatever works for you is great!)


That's it. Simple is the key to life. 

1. Set oven to 350 degrees to preheat. 
2. Coat chicken in egg. Make sure it's nice and eggy. It feels really gross. At least to me.
3. Roll the chicken in your breadcrumbs. Like get as much as you possibly can on there. Make sure it's coated. Or not. You're choice. 


4. Place chicken on a tin foiled cookie sheet and place in the oven. 
5. Bake for 30 minutes. 
6. Add mozzarella cheese and bake for another 5 minutes. 
And you're done! 


Add as much marinara sauce as you want. And a side. If that's your thing. I love carbs so I added spaghetti. I got a little too much sauce too. I just need somebody to convince me that spaghetti squash really doesn't taste terrible and I'll try it. 


I was so exicted to try it that I forgot to take a decent pictures. This is terrible I know. I'm embarrassed. 

Of course there are things I will do differently next time. 
- I'll add salt and pepper to the eggs and a couple of my own spices to the breadcrumbs. 
- I won't wait as long as 30 minutes to add the cheese. I like mine a little more melted than it is. 
- I'll remember to tenderize the chicken. Like I said, I didn't feel good and really wanted to eat soon. 
- I might place them in a glass pan and bake them with sauce and cheese on top. Maybe some grated cheese on top of the chicken then the sauce and fresh mozzarella. Who knows.

A Boozy Haze

Good morning cupcakes! Hope you all had a wonderful three day weekend. I had a wonderful 1 day weekend and I plan on showing you all the wonderful pictures from it.

My Wife and I hadn't seen each other since the Kenny concert and she missed me. Ok, I missed her too, but I decided that we were going to our local casino, DownStream, for their brunch buffet. That shit was the bomb. I had a legit food baby all day because I ate too much.

This is also how I ended up passed out by 8:30. More about that later.

They have a quesadilla/omelette station. Guys, that's a big deal for the podunk town I live in.


Unexpected chocolate lava cake. But it was sooooo good. 
Don't even get me started on the dessert bar.


This may have you fooled, it's not just oj. It's a mimosa. In the largest glass in the history of ever. Around here, people apparently don't know what a mimosa is, or what glass it should come in. I asked if it was normal for them to come in a glass like this, the lady said she wasn't sure what kind of glass I'd like it in. Weird huh. Not one to turn away extra booze, I drank it like a champ. And I soon spent the rest of my Sunday in a boozy haze.


If my eyes don't give it away, I don't know what does.


Had to try these babies. They're just ok. I'll stick to the regular ones. But it did help my booze induced haze.

And then, I was out at 8:30. Sleeping like a baby. And it was wonderful.

Day 1

Hey cupcakes. I miss you. I've been busy getting back to life since my vacation. I'm so behind on blog reading too. Woof.

I know that I have enough material for the week but I can't decide what to talk about on what day. Hmmph.


I'll just start from the beginning. Wife and I left on Friday afternoon to start our journey. We did really well until we got stuck in traffic. I figured it was just OKC 5 o'clock traffic, but there was actually a car accident. That shit looked rough. But we made it!!! And I only had to use my gps once. And I don't even know why I did because I've been to my auntie's enough times I should know how to get there.


She's a princess. Don't argue, you won't win.





After we got there we hung out and lugged our 646648945 bags in. Mind you this was only a 4 day trip. We don't pack lightly. I don't think we know how. After we visited for awhile it was time for dinner! My favorite. lol. We went to BJ's which is a brewhouse. I'd never been to a brewery before so I was excited. That shiz is HUGE!! And it was commencement night for OU so they were even busier than normal. I knew that since I was at a brewery I had to have some beer, and not budlight. I wasn't sure what kind I wanted so they let me sample 3 of them.

After that it was time to go home. The next day was Dallas/Kenny day!!

I'm Gonna Live Mas When I'm Old

So...there was a football game last night....and I loved every minute of it! I had a great SuperBowl Sunday and I hope ya'll did too. =)) And my team won! I knew I should have bet people. I"m not a gambler. I already lose money, I don't need to do it on purpose.


Highlights of the Game

1. M&M's Commercial.
I love them. They're my favorite candy. And this one just cracked my shit up. lol. 

              

2. Fast & Furious 6
I'm a big dork and I love these movies still. Okaky, I love the ones with the original cast in them! The first one is one of my favorite movies of all time. But waiting till Memorial Day? What a tease!

3. Two Broke Girls Commercial
It was perfect! So awesome. I love this show and these girls. I've always said that would be my stripper song. It was in my past life. I'm sure. And they added glitter! What's not to love??

Blake and I pigged out on a lot of food. Way to much for just two people. Oh well!

Food was good! And the chicken balls (I laugh everytime, so immature, I know) tasted amazing! Next time I  make them are things I want to change. Later this week I'll post the recipe! I love making new food.

Ugh my heart broke but it was so sweet! I love animals. And I love beer. Why not put them in a commercial. They have my money heart forever.

This was just awesome and when I'm old, I'm definitely gonna do this. 



7. Beyonce-Bowl
Girl still has it going on! Get it Bey! And then the Destiny's Child reunion....oh sweet childhood yes! I shed a tear or two. 




Lows of the Game

1. Go Daddy Commercial.
EWWWWW. Was that up close and personal make out shot necessary? And it was way too long. Ugh. So nasy. 

2. Dodge Ram, He Made A Farmer Commercial
Yawnnnnn....and I liked the rest of the car commercials. This was too long. And repetitive. Sorry Farmers. I appreciate what you do but this was too much. TOO MUCH.

3. Power Outage
It made me tired. And then I slept through the rest of the quarter after the power came back. The jokes were a high though. I just didn't want to make the list any longer. Long lists don't interest people!



All in all, it was a great Super Bowl day! Happy Monday cupcakes!

Busy Much?

Happy Monday lovies!!! Yep, I'm happy it's Monday. Because I'm off with absolutely zero responsiblities today. But I'm gonna be responsible and do stuff anyway.

Just a warning...this is probably going to be a novel length post. Sorry. Big hugs if you make it through the whole thing. =)

My weekend actually started last Thursday. I told you guys that I was going to Oklahoma City to celebrate my aunt's last dose of chemo. Early that morning boyfriend, Teag, and I all hopped in the car and headed there. 4 hours later and we get there. My aunt gives horrible directions just so you know. I already knew how to get there, I just didn't know how to get to her chemo center. But I figured it out. After chemo was over we drove over to this amazing steakhouse called SaltGrass. It was amazeballs! Expensive but delicious.

 These are all the fabulous people who came out to celebrate my aunt. My aunt is the one with the beanie on, my grandma is in the white shirt next to me, and auntie's husband is behind me in the red jersey. All that love for one person!


This was my lunch. Steak and shrimp with mashed potatoes. OMG that steak, it was delicious. Juicy,tender, and was perfectly seasoned. I can't wait to go back there.

Unfortuantely, my slightly slow ass didn't ask off for Friday, so we had to hop back in the car and drive another 4 hours home. And I did all the driving. YAWN. Boyfriend and I were tired so we chatted a lot and told stories of things we did when we were kids. I felt so connected on the ride home. Love it.

Friday I was a double at work. Nothing exciting except some bitches I work with threw me under the bus to our manager. They never even came to me with their "problems" just went straight to him. And their problems are such bullshit too. Ugh. Don't want to think about it. I'll just get mad. I ended the night with the worst headache I've had in a long time. I couldn't open my left eye because it hurt so bad. I didn't want to drive home from work that night. I always want to leave that place and I hung out until I felt a little better. 

Saturday morning I got to work and worked the day away. Then it was birthday party time. Boyfriend's best friend's son celebrated his first birthday this week. Ahhh I remember first birthdays! Such an exciting time in life. We all went to Root Zero 3 for dinner. Here's little mister with his smash cake. Wife was there and I had to get a picture of mini with her best friend! It was nice to spend a Saturday with my friends and family. 



Sunday was another double! Except I had to buss for my morning shift. Oh my fucking gahhhh...that is some tough shit. I have much more respect for our bussers now. I know that my ass doesn't want to do it. I lost like 5 pounds from sweat. My clothes were so icky and I felt disgusting. I worked hard. HARD. 


I'm the worst blog mama ever. My blogiversary was on the 19! We're officially a year old. I can't believe I've made it a year. So crazy. I've gone from 0 people to 87 of you wonderful readers. I'll recap my favorite posts later this week. Thank you all for sticking with me. I love sharing my life with you! 

I'm watching teen mom right now, these bitches are crazy. I mean, let's move in with our boyfriend 2 months after being together. No offense if that's your jam, but these girls already have to much going on. And I don't know why Jenelle tries to live with anybody, she just gets in a fight with them every time. Way to predictable thanks. And Chelsea, wtf spoiled much? Her mom got her a new puppy because of the unfortunate circumstances of poor Frankie. She has a child, she doesn't need two dogs. Leah is just lonely. They're all lonely. I get it. But shit, focus on yourself not boys/girls/dogs/moving/having more babies. 



That was a little off subject. I decided today that I'm going to do the 5 for Five linkup today. Maybe that will hold me accountable for the week. 

- Get 5 loads of laundry done. That means put away too. Eeek. I love the washing and drying part. Just don't like to put it away. I have mountains of clothes in my room. And I'm tired of it.

- Workout 3 times. I can do this. 

- Start Mini's birthday party process! This means I need to finalize my guest count and buy my invitations. 

- Cook 2 meals at home. I've reverted back to eating out too much and I hate it. Blahhh.

- Make food for boyfriend and I for Superbowl Sunday before Sunday night. We're having dips, and who knows what else so I need to start sooner rather than later so I don't have to rush around.

Lounging

Aww kids, what a good weekend (besides the unfortunate acts that have occured, more on that tomorrow). Boyfriend and I were off on Saturday and Sunday together. What an awesome thing that never happens! Saturday we celebrated his birthday. And this is what we did.





I got so excited to try this that I forgot to take a picture before I took a bite. Excellent cake pop though. I got it from starbucks.

Yep, just like the cat we lounged on the couch all day long! In our lounge clothes at that. I had a great Saturday. I hung out with my momma in the morning, because boyfriend wanted to sleep in. He normally has to work every Saturday and be there at 9 so this was something nice for him. My momma and I did a little shopping, then we watched tv. I then hung out with boyfriend all night. I don't care what anybody thinks of our nothing birthday celebration, it was just what we needed! 

Sunday my momma took us out for dinner for boyfriend's birthday. We went to Mucho Mexico. His most favorite place ever. It's a Mexican buffet that has some bomb ass enchiladas and wings. Then boyfriend took me and my mini to Braums for some ice cream! All in all, it was a wonderful relaxing weekend.

My Food...

It's Tuesday and I feel like death. Missouri weather can't make up it's damn mind on what it's going to be like outside and that really irritates me. Because then I get all sinusy and feel like death. 75 and windy yesterday and when I woke up it was 43 and sunny. I don't mind the cold and I'm glad it came but come on, ease in to it so us sicklies don't get sick!

Tonight the kiddo and I were supposed to be in the Christmas parade for my work but I don't think I want to now. I don't want to sit in the cold for two hours when I already feel like death. And yeah, I feel bad about telling her we were doing it and then not going but I think she's ok with it because I told her that we could put up our Christmas decorations tonight =) And that makes me happy! Side note to all new parents or people who might be parents some day *When you plan on doing something exciting with your kids, don't tell them just incase you back out. It doesn't always end well*

I know that all 4 of you who actually read this of you fabulous readers are dying to know about my crockpopt buffalo chicken macaroni and cheese! I think it turned out pretty good! However, there are things I will change when I make it again.


I started off with this recipe but really modified it to make it my own. 

Ingredients
- Chicken breats
- 2 tbsp minced garlic
- 3 tbsp ranch dressing
- Parmesan cheese ( I don't know how much I just used whatever looked good)
- Bag of mild cheddar 
- 1 3/4 cup milk 
- More milk as to liking
- Half bottle Frank's Red Hot Wing Sauce
- Chalula (hot sauce) 

You put the chicken breasts, garlic, dressing, 1 3/4 cup milk, wing sauce, and parmesan cheese in the crockpot on high for 3-4 hours or until your chicken falls apart with barely any effort on your part. 
After I shredded the chicken I added my noodles (uncooked of course, this is about easyness) and my cheddar cheese. And more milk. And then some more, and a little bit more. Basically you add it until you think it's the right consistency. I added my hot sauce in at this time to. Then continue to cook it on high until the noodles are tender. Tada! Then stuff your face. 

Pretty easy, like I said. Now for my changes 
- I'm not adding ranch next time
- I'm not using shredded cheese, I'm using velveeta
- More garlic or something of the sort 

It just wasn't cheesy enough for me. My macaroni and cheese has to be super super super cheesy. And I couldn't taste the ranch so basically it was un-needed calories and I think it took some of the spicy away. 

And my last tip...Crockpot liners. Yep, I just went there. Seriously it's like a litter box liner but for your crockpot. The crockpot doesn't ever get dirty. WINNING. 

After dinner it was time for the Christmas parade in the town I live in. It was actually decent and had some pretty neat floats. It was better than the Maple Leaf parade this year! Except for Santa. They had a terrible Santa. He was skinny and you could tell his beard and hair were fake. You could see his black hair poking out. Seriously, in this town we have enough overweight old guys that look like Santa. Pick a better one next year! I'd show you the only picture I took but I don't have my phone cord. Maybe later!

Picky Eating

I was totally going to hop on the Christmas wishlist today. And I was going to create my own Polyvore set to show it to you guys. Then I couldn't make a template look right and couldn't find a pre-made template that I liked either -.-

So if any of you out there are Polyvore experts please help a girl out.

My weekend consisted of working. In case you haven't gotten it that's what I do most weekends. Therefore, there's never a weekend update unless there happens to be something exciting going on. Not here this weekend!

I've been on the hunt for a buffalo chicken macaroni and cheese crockpot recipe. Do you know how hard it is to find one of those that sounds good?? It's not very easy. Everything has so many steps and all kinds of stuff I don't want in it. Making the recipe harder than it should be. And when it comes to my crockpot, I don't do hard. That's the joy of crockpot cooking, that everything is supposed to be easy. I actually have requirements for this recipe too

- I don't have to cook the chicken before
- I don't have to cook the noodles before
- No veggies
- Not a billion types of cheeses

I'm a little picky. I'll admit it. And because of said requirements, I can't find a decent recipe. So I've decided to use some details from a whole bunch of them and add in my own ideas to. I've never made my *own* recipe before. I'm really good at following them though, so hopefully this turns out ok, other wise taco hell will gain some of my hard earned green tonight!

Maple Leaf Weekend

It's time for my weekend update. It was just way to much for a Monday though.

I had a great weekend! I was off of work all weekend long and I got to spend it with people who mean the most to me!

Friday night boyfriend and I went to another couple's house to drink too much beer and play crazy drinking games. Y'all ever heard of Presidents and Assholes? If you haven't I suggest you look it up. Normally we get  crazy drunk but because everybody had to get up in the morning we weren't passing out drinks like we do. I didn't take a lot of pictures. I did get this one though

This was boyfriend's hand...see I told y'all he can be quite evil. He didn't get this once...but TWICE! 

Saturday was the one and only Maple Leaf festival! I got all super excited for it just to be let down by the stupid parade. It was terrible. There were hardly any floats, the bands didn't really perform, there were two 15 minute breaks in the parade and so many politicians! I'm sorry but that's just not what I came for. And it's a long parade. Not some rinky dink bullshit...so it could have been better. I wanted to day drink and I think if I would have been day drunk it would have worked out better. True story.

Unfortunately I didn't get pictures of the whole group, with my momma, my aunt or boyfriend =(

I do have to say though, I was quite pleased with the company I had. Those six people with 
me that day really mean a lot to my heart and I wouldn't have had it any other way. 

I did take one picture during the parade too! We have a place here that makes dynamite. They had a float for the first time this year and it was really cool! I'd say best thing in the parade. 

Yes, that's confetti! They had "dynamite" that shot out confetti. Pretty fucking awesome if you ask me.

After the parade we all went to lunch at a local Chinese place. It was just ok. Why did we eat lunch at a restaurant when there is plenty of fried food to be had by all? Beats me. I didn't eat very much so that I could have the fried foods. See I had a fat weekend and I'm not ashamed. I ate whatever I wanted because starting yesterday I'm watching what I'm eating. Whole different post though. Let's look at my food intake. 

Ok, so this wasn't mine but I had a lick and it was good!

Roasted corn on the cob. Umm yes! I put garlic salt and pepper on it and it was delish.
Look at all that butter on the top of that paper towel. Mmmmmm. lol.

Funnel cakes...I never eat a whole one by myself. I appreciate not visiting the dentist.
Teag loves sugar so she munched out on it.

Again, not mine but I had some. 

And finally day drinking...haha. Just this one though. I was too tired for more.

Seriously there was so much more I wanted to try. There was a caramel apple delight...it looked good! 
And I just love fair foods. I can't help it. 

We walked around and looked at the arts and craft show. Teag got a really cool name plate for her wall in her room.


She loves hearts, peace signs, and rainbows so this made her really happy. I think my daughter was a hippie in another life. 

And all I got was this 

A really super sore sunburn. 
And memories to last a life time! 

I seriously could not have been happier with my day. After we were done Wife and I went 
to boyfriend's house and hung out with him for a bit. Then we went to eat at Olive Garden with my aunt
for a great girlie dinner! 

Sunday was filled with some more family time! Auntie and I took Teag to a corn maze/fall festival type deal.
I was actually looking for a pumpkin patch but fell into the corn maze thing. It was fun. And we got to buy a pumpkin so now we finally have one! 



See how excited she was! I just love it. lol. 

And that was my fabulous weekend. I'm pretty happy about it. =)
